Description

This research investigated odor perception of geosmin, 2-methylisoborneol, and nonadienal andcorrelation to vapor phase concentrations. Unitless Henry’s Law constants were calculated atmultiple temperatures (20, 25, 32 and 39°C) using the vapor and aqueous phase concentrations.The values for Henry’s Law constants ranged from 0.002 to 0.02 for four temperatures between20 to 39°C with geosmin and 2-MIB having similar values and higher values than for nonadienal.The data demonstrated that as the gas phase concentration increased, the perceived odor intensityalso increased, but only up to a certain point. Although the vapor phase concentration linearlyincreased as the aqueous phase concentration increased, the Flavor Profile Analysis (FPA) intensity increased at a muchreduced rate and eventually leveled-off.
